The
Department of Food Science and Technology of Shivaji University has received
Rs 31.13 lakh for carrying out research to develop “Healthy and Nutritious
Noodles”. The Ministry of Food Processing Industries (MFPI) has sanctioned the
amount. Instant noodles will be developed from legumes and leafy vegetables
easily available in the rural areas during the period of two years. The
refined wheat flour lacks dietary fiber and has little nutritional value.
Under this project, the researchers will use legumes such as Soya, chickpeas
and leafy vegetables such as spinach, drumstick leaves and Bengal gram leaves
for developing new noodles. These noodles will help in solving the
malnutrition problem and disorders resulted due to deficiency of minerals and
fibers. This project will be supervised by Dr. A. K. Sahoo Principal
Investigator and Mr. R. C. Ranveer Co- Investigator.
